Health-Preserving Black Garlic

Ingredients:

  • Fresh garlic bulbs with skins: As needed

Tools:

  • Electric rice cooker: 1
  • Stainless steel steaming rack: 2
  • Kitchen paper towels: As needed

Directions:

  1. Place a steaming rack with legs into the electric rice cooker. Layer two sheets of paper towels on top. Put a layer of garlic bulbs on the paper towels.
  2. Place another steaming rack without legs on top of the garlic bulbs. Layer two sheets of paper towels on top. Add another layer of garlic bulbs. Place two sheets of paper towels on top of the garlic bulbs.
  3. Cover the cooker, press the “keep warm” button, and keep warm for about 13 days. Afterward, allow for one more day of ventilation. The black garlic will be ready to eat.

Tips:

  3. After the black garlic is done and air-dried, it has a sweetness and a soft, sticky texture. Black garlic offers excellent health benefits.
