Ingredients:

  • Gai-lan (Chinese broccoli) – 250g
  • Fresh sea kelp – 50g
  • Black beans – 60g(may substitute with blueberries, or use both)
  • Red beans – 120g(may substitute with one large tomato, or use both)
  • Whole milk yogurt – 3/4 cup
  • Salt to taste(rock salt/sea salt is preferred)
  • Apple cider vinegar – one tablespoon

Steps:

  1. Soak black and red beans for 8-10 hours and then cook them. Cook the sea kelp and slice into thin strips.
  2. Blanch gai-lan for a minute, drain and cut into segments.
  3. Put the above ingredients into a large bowl, mix in yogurt, apple cider vinegar and salt, toss evenly and serve.

  1. Use high-quality, authentic apple cider vinegar; avoid vinegars adulterated with chemical ingredients, which can be harmful to health.
  2. Do not oversalt your salad, add just enough for it to be flavorful. You may also add some soy sauce to improve the taste. 
  3. Besides cooling liver fire, this salad also nourishes the liver in a balanced way. It helps to release excess and replenish what is lacking.
